King Ranch Casserole

  • 2 cups cooked chicken
  • 1 cup chicken broth (2 cups if you like saucy casserole)
  • 1 small onion, diced
  • 1 can diced tomato (Mexican seasoning)
  • 1 can cream of chicken soup
  • 2 cups (about 1 pound) grated cheese
  • flour tortillas
  1. Preheat oven to 350ºF
  2. Mix all the ingredients together
  3. Cover the bottom of a 2 qt casserole dish with tortillas
  4. Spoon a thin layer of the mixture on the tortillas
  5. Add a layer of tortillas
  6. Repeat until out of mixture and tortillas
  7. Bake for 25 minutes

This is another dish that is ripe for additions. For a little heat, add some finely chopped peppers. I really enjoy adding canned black beans (drained). You can also save some cheese to add to the top with about 5 minutes to go. Another good add on is some salsa. This makes a lot, so have some containers for leftovers.
